Traditional Middle Eastern Kebabs

The Fourth of July is on the horizon. Here is a flavorful, and healthy alternative to the customary burgers, and hot dogs. When choosing your beef for Middle Eastern Kebabs, it pays to speak to your butcher. Ask for them to source “bottom flap sirloin”, traditionally known in New England as “steak tips”. Any summer party gets better because this cut of beef is one of the most tender, and succulent.

Fried Green Tomato 3 ways

It's definitely "Summer in the City". Tomato Three Ways, is a great way to face the heat. Fried green tomatoes, paired with my very own crowd favorite, Spicy Tomato Jam, drizzled with Sauce Choron, and finished with a topping of Florida stone crab. Sauce Choron is a derivative of hollandaise, one of the French "Mother Sauces, created by the simple addition of some form of a tomato product. Chicken and Chanterelles

Discovering the abundance of Chanterelle Mushrooms North Florida has to offer was a pleasant surprise as a Boston transplant Chef learning the land. The ingredients on the plate are simply made to accommodate the delicate flavors and textures the locally foraged mushrooms have to offer. It does not hurt to use locally sourced heirloom corn for the Polenta and Chickens if they're available!

Quail Confit Salad

A delicious combination of sweet, salty, crunchy and creamy. This dish was created as a method to elegantly serve shredded quail in a salad while using it as a method to search out and filter any buckshot from within the freshly hunted catch. A fantastic photo that just floats on the plate!

Truly an honor to be selected as one of the Chefs for the 2017 Naples Winter Wine Festival

Being chosen as one of the 12 premier Chefs for the 2017 Naples Winter Wine Festival was such an honor that will not soon be forgotten. Sharing a marquee with Celebrity Chefs such as Wolfgang Puck, Tom Colicchio and Jose Olivera (just to name a few) is beyond anything I could have imagined 10 years ago. It is only up up and up from here, but this moment in my career will always be remembered as a point of excellence.
